Olympic BLT Salmon Burgers With Avocado Sauce Recipe
This BLT salmon burgers recipe celebrates the Pacific Northwest's natural abundance. Inspired by Olympic National Park, where it is a staple in restaurants, these salmon burgers are amazing paired with a light avocado sauce slathered on toasted brioche buns.
Ingredients
Salmon Burgers
- 1 pound ground wild-caught salmon
- 1 large egg
- 1/2 cup panko breadcrumbs
- 1/4 cup red onion, minced
- 2 garlic cloves, minced
- 1 tablespoon cilantro, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Avocado Sauce
- 1 large avocado, peeled and pit removed
- 1/4 cup plain Greek yogurt
- 1 tablespoon cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon hot sauce
- 1 garlic clove, minced
BLT
- 4 brioche hamburger buns
- 1 romaine lettuce head, leaves separated
- 1 large tomato, sliced
- 1/2 pounds bacon, cooked
Instructions
Make Salmon Burger Patties
- Add all salmon burger ingredients to a large bowl and mix well.
- Divide salmon burger mixture into four equal portions. Use your hands to roll each portion into a ball, then flatten into a patty that's about 3/4 inches thick.
- Put salmon burger patties on a plate, cover and put in the fridge for about 30 minutes, allowing them to cohere.
Make Avocado Sauce
- While the salmon burgers rest in the fridge, prepare the avocado sauce.
- Put all avocado sauce ingredients in a blender or food processor.
- Blend until the sauce is creamy and smooth. Season to taste with salt and pepper.
Grill Salmon Burgers
- Preheat your grill to medium-high heat.
- Remove salmon burger patties from fridge and allow them to come to room temperature.
- Lightly oil the grill grate with a high-smoke-point cooking oil, such as avocado oil.
- Lightly toast the burger buns on the grill.
- Carefully place salmon burger patties on the grill grate, directly above the heat. Grill for about 4 minutes or until the cooked sides are golden brown, crusty and release easily from the grate.
- Flip salmon burgers and grill another 2-3 minutes, again until the bottom sides are golden brown, crusty and release easily.
Assemble BLT Salmon Burgers
- Spread avocado sauce on both the bottom and top halves of the buns.
- Place lettuce on the bottom halves, top with a salmon burger patty, tomato and bacon.
- Place other half of the buns on the salmon burgers, serve immediately.

Notes
Note 1: If you can't find any ground wild-caught salmon in your local stores, you can use a food processor to finely chop whole salmon fillets. Alternatively, you can also use a sharp knife to finely chop the salmon fillets yourself. Just make sure you have about 1 pound of salmon.
