Halibut and scalloped potatoes recipe inspired by: Glacier Bay National Park, Alaska (alternatively: Kenai Fjords National Park or Wrangell-St. Elias National Park)
One of the most spectacular national parks in America, Glacier Bay National Park preserves millions of acres of fjords, coasts, estuaries, mountains, glacier, rain forests and open ocean in southeastern Alaska. It’s a wildlife paradise, home to everything from grizzly bears and bald eagles to whales and numerous fish species.
A UNESCO World Heritage Site, Glacier Bay National Park encompasses 950 square miles of ocean, nearly 1,200 miles of coastline and over 1,000 freshwater fish habitat systems. Collectively, these aquatic habitats support more than 200 species of fish and a plethora of shrimp, crab and mussel species, along with other marine creatures.
All five species of salmon—sockeye, coho, pink, chinook and chum—live in Glacier Bay National Park, along with rainbow and cutthroat trout, Dolly Varden char, Pacific cod and Pacific halibut, which can weigh up to 500 pounds.
That amazing halibut, one of the most iconic Alaskan fish, is the superstar in this national park-inspired recipe. Below, you’ll find my recipe for halibut and scalloped potatoes, topped with a delicious parsley gremolata.
The softness of the halibut, the creaminess of the potatoes and the zestiness of the parsley topping are a phenomenal combination. This is a really easy national park dish to make and it’s absolutely amazing.

Glacier Bay Halibut and Scalloped Potatoes With Gremolata Recipe
Inspired by the richness of the seas of Glacier Bay National Park in southeastern Alaska, this amazing national park recipe features soft halibut, creamy scalloped potatoes and a zesty gremolata. Delicious!
Ingredients
- 1 pound halibut, patted dry
- 1 pound potatoes, peeled and cut into 1/2-inch slices
- 3 ounces light cream cheese
- 2/3 cup water
- 3/4 cup Parmesan cheese, coarsely shredded
- 1 garlic clove, minced
- 1 lemon, zested and cut into wedges
- 2/3 cup parsley, chopped
- Extra-virgin olive oil
- Salt and pepper
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Heat a large pan over medium-high heat.
- When pan is hot, add cream cheese and water. Whisk until smooth and melted, about 3 minutes, and season with salt and pepper.
- Put the scalloped potatoes in the cheese/water mixture in one layer. Bring to a boil.
- When boiling, reduce heat to medium-low, cover the pan and let simmer until the sauce is somewhat thickened, about 7-8 minutes.
- Sprinkle Parmesan over the potatoes and place the pan in the middle of the oven. Bake until cheese is starting to get a golden color, about 10 minutes.
- Take pan out of the oven (be careful!) and add the halibut on top of the scalloped potatoes.
- Season with salt and pepper and drizzle everything with olive oil.
- Put pan back into the oven and bake until halibut is cooked through and cheesy potatoes are soft and golden, about 15 minutes.
- While halibut and scalloped potatoes are baking, prepare the gremolata by mixing the garlic, lemon zest and parsley in a small mixing bowl. Add 1 tablespoon of olive oil and season with salt and pepper, mixing well.
- When halibut and scalloped potatoes are cooked, divide them between plates. Top with gremolata and serve with lemon wedges on the side. Enjoy!
Notes
Note: You can also fold spinach into the cream cheese mixture between steps 5 and 6 for a creamed spinach sauce. For this recipe, I'd recommend 2 cups of baby spinach.
