Pumpkin patches, corn mazes, well-stocked farm stands and harvest festivals abound in the Great Smoky Mountains in fall.

This historic region has a long and rich agricultural history, going back many centuries to the farming practices of the many Native American Tribes who used to—and still do—call the Smokies home.

Pumpkins were one of the main crops grown by Native Americans, while modern-day farms continue to cultivate this extremely popular seasonal vegetable.

Nowadays, the sudden appearance of pumpkin-spiced lattes in coffee shops is a sure sign fall is approaching. While all things “pumpkin spiced” may not be embraced by some people, I personally am a huge fan of this comforting spice blend.

So, here we have a delicious breakfast recipe that highlights pumpkins and pumpkin spices, inspired by the historic farms in and around Great Smoky Mountains National Park.

This is an amazing fall breakfast, but I don’t mind having this in winter or even spring, too. Especially with some fresh berries, it’s a delicious way to start a Saturday or Sunday, no matter what season it is.

And that’s not all: these spiced pumpkin waffles are also 100% vegan.

Topped with some maple syrup, fruit, (vegan) whipped cream and/or your favorite nut butter, these spiced pumpkin waffles will be a hit in your household!

Great Smoky Mountains Spiced Pumpkin Waffles Recipe

Inspired by the historic farms in and around Great Smoky Mountains National Park, this spiced pumpkin waffles recipe is amazing on any Saturday or Sunday in the fall (or any season!).

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon pumpkin spices
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup almond milk
  • 1/4 cup maple syrup
  • 1 tablespoon avocado oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 200°F.
  2. In a large bowl, thoroughly mix dry ingredients: all-purpose flour, pumpkin spices, baking powder, baking soda and salt.
  3. In a medium bowl, thoroughly mix wet ingredients: pumpkin puree, almond milk, maple syrup, avocado oil and vanilla extract.
  4. Gently pour the wet ingredients mixture into the dry ingredients mixture. Stir with a silicone spatula until well combined. The result will be a thick batter.
  5. Pour 1/2 cup (per waffle) into a preheated waffle iron. Cook pumpkin waffles according to your waffle iron instructions. (Most waffle irons will cook a pumpkin waffle in about 5 minutes.)
  6. When waffle is done, put it on a heat-proof plate and keep warm in the oven.
  7. Repeat steps 5 and 6 until all batter is used up. This recipe makes about six decently sized spiced pumpkin waffles.
  8. Serve warm and topped with your favorite toppings.
  9. Enjoy!

Notes

Note 1: If you don't have pumpkin spices, you can use 1 teaspoon of cinnamon, 1 teaspoon of ginger and 1 teaspoon of nutmeg instead.

Note 2: You can use extra-virgin olive oil instead of avocado oil.
