The stars of this dish are turkey, mushrooms and wild rice, all of which are naturally found in and around Minnesota’s Voyageurs National Park (although hunting or foraging is not allowed within the national park).
In fact, northern Minnesota and the rest of the Great Lakes region is where wild rice originated. Wild rice is a traditional staple in the diets of Native Americans in the area, particularly the Ojibwe.
Combined with wild turkey and edible mushrooms, it makes for a superb soup!

Voyageurs Turkey and Wild Rice Soup Recipe
Inspired by Voyageurs National Park, this hearty and healthy turkey and wild rice soup recipe is a traditional Minnesota soup, perfect for cozy evenings at home or around the campfire.
Ingredients
- 4 cups cooked turkey, shredded
- 1 cup wild rice
- 2 cups mushrooms, sliced or quartered
- 2 medium carrots, chopped
- 3 celery stalks, chopped
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh sage, finely chopped
- 6 cups turkey broth
- 1/2 cup light cream cheese
- Extra-virgin olive oil
- Salt and pepper
Instructions
- Heat a tablespoon of olive oil in a large soup pot over medium heat.
- Sauté carrots, celery and onion until softened, about 5 minutes.
- Add mushrooms and garlic, stir to combine and sauté for another 5 minutes.
- Add thyme, rosemary and sage, stirring until fragrant, 1 minute.
- Pour in turkey broth, season with salt and pepper, and bring to boil.
- Add wild rice, reduce heat and simmer partially covered for 30 minutes.
- When rice is almost cooked, add turkey and cream cheese. Stir until heated through and melted, about 10 minutes. Taste and season with more salt and pepper if necessary.
- Serve hot and enjoy!
Notes
Note 1: Instead of turkey and turkey broth, you can also use chicken and chicken broth or vegetable broth.
Note 2: If you happen to be out of cream cheese, light sour cream works beautifully as well.
