Although they’re cooked in a similar way as regular American pancakes, they’re nothing like them. In fact, banana fritters aren’t pancakes whatsoever. I’d describe them as somewhere in between pancakes and donuts.

Essentially, they’re nothing more than batter fried in oil. Fritters can have a sweet or savory “filling”, but in this case, it’s bananas that steal the show.

Of course, there’s some spices involved, too—this is a Caribbean dish after all. Cinnamon, nutmeg and vanilla are contribute to the deliciousness of these Virgin Islands banana fritters.

Fried in coconut oil until the outside is somewhat crispy, while the inside remains fluffy and light, they’re a fun breakfast idea.

You can sprinkle a little powder sugar on top or, as I did, top your banana fritters with some coconut flakes and a drizzle of honey. Additionally, fresh tropical fruit is a fantastic side to this national park-inspired breakfast recipe.

You can whip them up in 20 minutes or less. Super-easy, ridiculously quick and, above all, a great way to start your day!

Virgin Islands Banana Fritters Recipe

Packed with tropical flavors and potassium-rich bananas, these Virgin Islands National Park-inspired banana fritters will transport you to palm tree-lined and sun-soaked beaches.

Ingredients

  • 3 large ripe bananas
  • 1 cup all-purpose flour
  • 2 tablespoons sugar, optional (see notes below)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil

Instructions

  1. Peel the bananas, break them in pieces and put in a large mixing bowl.
  2. Mash the bananas with a potato masher or fork.
  3. Add flour, cane sugar, vanilla extract, cinnamon, nutmeg and salt. Mix well until combined.
  4. Heat coconut oil in a non-stick pan over medium-high heat.
  5. When oil is hot, add scoops of banana fritter batter to the pan, taking care not to overcrowd the pan.
  6. Cook until the bottom side is nicely browned, about 3 minutes. Flip with a spatula and cook the other side, another 3 minutes or so.
  7. Transfer to a paper towel-lined plate to drain. Repeat with the rest of the batter.
  8. Divide banana fritters into portions, top with your favorite toppings. (I love coconut flakes and honey.)
  9. Enjoy!

Notes

Note 1: Depending on the ripeness of your bananas, you may need to reduce the amount of added sugar. The riper the bananas, the sweeter they are and the less sugar you need to add. For really overripe bananas, you might even consider not adding any extra sugar at all.

Note 2: You can use regular granulated sugar in this banana fritters recipe, or opt for cane sugar or brown sugar. Whatever you have in your pantry will work.

Note 3: These Virgin Islands banana fritters are amazing for breakfast, served with some fresh tropical fruit(s), coconut flakes and/or honey. You can, however, also have them as either an appetizer or dessert.
