As part of what was formerly known as the West Indies, the Virgin Islands have a long history of colonization, trade and, yes, slavery. They’re a melting pot of European, West African and North American cultures.
These diverse cultural influences are apparent in the cuisine of the Virgin Islands. Europeans imported ingredients like onions, garlic and beef, while Africans brought a variety of cooking styles.
Potatoes, corn, beans and peppers came from the Americas. People from India introduced curries to the Caribbean, which are now essentially a staple in Caribbean cuisine.

Virgin Islands Creamy Curried Chicken Recipe
Inspired by Virgin Islands National Park, this creamy curried chicken recipe features the best of Caribbean cuisine, from flavorful curry to tender chicken and soft rice.
Ingredients
- 1 cup white rice
- 2 chicken breasts, cut into 2-inch strips
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, diced
- 1 medium onion, halved and sliced
- 6 ounces snap peas
- 1 cup vegetable broth
- 6 ounces light cream cheese
- 1 teaspoon garlic powder
- 3 tablespoons curry powder
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
Instructions
- Cook rice according to package instructions. When done, season with salt and pepper, keep covered and set aside.
- Season chicken generously on all sides with salt and pepper.
- Heat olive oil and butter in the pan over medium heat.
- Add chicken and cook until browned on both sides, turning once, about 5 minutes.
- Add all the vegetables and cook 2-3 minutes, stirring regularly.
- Pour in the vegetable broth and bring to a simmer.
- When simmering over medium-low heat, add the cream cheese, breaking it up and stirring with a wooden spoon until melted.
- Add garlic powder and curry powder. Stir to combine and continue simmering for a few minutes until sauce has thickened.
- Season to taste with salt and pepper. If you like more spice, add a dash of cayenne pepper.
- Serve hot over rice. Enjoy!

Note: Instead of snap peas, you can also use other peas, including frozen peas.
